- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, melted
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the eggs, milk, vanilla extract, and melted butter until smooth.
- Gradually pour the wet mixture into the dry ingredients, stirring until a soft dough forms.
- On a floured surface, roll out the dough to about 1/2 inch thick.
- Cut the rolled dough into squares or circles, making sure they’re roughly uniform.
- In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).
- Fry the beignets in small batches for about 2-3 minutes on each side or until golden brown.
- Remove the beignets and drain them on paper towels.
- Dust with powdered sugar before serving warm.
Notes
For a dairy-free option, substitute whole milk with almond milk. For a healthier twist, replace granulated sugar with coconut sugar.
