- 1/2 cup unsweetened vanilla almond milk
- 1/4 cup + 2 tablespoons chia seeds

- 1 cup raw macadamia nuts
- 1/3 cup shredded coconut
- Dash of fine sea salt
- 1 lb fresh strawberries, thinly sliced (reserve 3–4 whole strawberries for garnish)
Instructions
- Whisk together coconut milk, almond milk, chia seeds, and collagen peptides in a medium bowl.
- Cover the mixture and let it chill in the fridge for at least 120 minutes, or preferably overnight.
- Pulse macadamia nuts, shredded coconut, and a pinch of sea salt in a food processor until it resembles a crumble.
- Slice your strawberries thinly, reserving four whole ones for garnishing later.
- Layer it in mason jars starting with the pudding, followed by strawberries, and then the shortcake crumble.
- Finish with a mound of crumble and a whole strawberry on top for a beautiful presentation.
Notes
For best results, let the chia pudding sit overnight to achieve the ideal texture. Experiment with different nuts or add dark chocolate chips for a twist.
