Description
A creamy and vibrant spaghetti dish featuring fresh spinach and zesty sun-dried tomatoes, perfect for a quick weeknight dinner.
Ingredients
Scale
- 8 ounces spaghetti
- 2 cups fresh spinach, roughly chopped
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- ½ cup grated Parmesan cheese
- ½ teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil, for garnish (optional)
Instructions
- Cook the Spaghetti: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. After draining the pasta, set it aside.
- Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add Spinach and Tomatoes: Stir in the chopped spinach and sun-dried tomatoes. Cook until the spinach wilts, which should take about 2-3 minutes.
- Prepare the Cream Sauce: Pour in the heavy cream, then reduce the heat to low. Stir well to combine with the vegetables.
- Season the Sauce: Mix in the grated Parmesan cheese, red pepper flakes, salt, and pepper. Stir until the cheese melts and the sauce thickens slightly.
- Combine with Spaghetti: Toss the cooked spaghetti into the skillet, ensuring it’s evenly coated with the creamy sauce.
- Let it Sit: Allow the dish to sit for a minute to let the flavors meld. Optionally, garnish with fresh basil before serving.
- Enjoy: Serve warm and savor the deliciousness with family or friends!
