Instructions
- Melt butter in a large pot over medium heat.
- Sauté chopped onions until they become translucent.
- Add diced potatoes and pour in vegetable broth.
- Bring to a boil, then reduce the heat and simmer until potatoes are tender (15-20 minutes).
- Stir in heavy cream, seasoning with salt and pepper to taste.
