Description

Ingredients

  • 2 cups vegetable broth

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Sauté chopped onions until they become translucent.
  3. Add diced potatoes and pour in vegetable broth.
  4. Bring to a boil, then reduce the heat and simmer until potatoes are tender (15-20 minutes).
  5. Stir in heavy cream, seasoning with salt and pepper to taste.
  6. Allow the dish an additional 5 minutes to meld the flavors.
