  • 4 cups (500g) bread flour or all-purpose flour
  • 1⅔ cups (375g) warm water
  • 1 cup (200g) active sourdough starter
  • 2 teaspoons (10g) salt

Instructions

  1. In a large mixing bowl, combine the flour and warm water to form a shaggy dough.
  2. Allow the dough to rest for 30 minutes.
  3. Add the sourdough starter and salt; mix until fully blended.
  4. Cover and let it sit at room temperature.
  5. Every 30 minutes for 2 hours, perform a set of stretch and folds.
  6. After the final fold, let it rise for 6 to 8 hours until doubled in size.
  7. Transfer the dough to a floured surface and shape it into a loaf.
  8. Place it seam-side up in a floured proofing basket; cover and refrigerate for 8 to 12 hours.
  9. Preheat the oven to 450°F (232°C) with a Dutch oven inside.
  10. Remove the dough from the fridge, score the top, and lower it into the hot Dutch oven using parchment paper.
  11. Bake covered for 20 minutes, then uncover and bake for another 25 minutes until golden brown.
  12. Cool completely on a wire rack before slicing.

Notes

Store bread in a paper bag at room temperature; slice and freeze if not consumed within a few days.
