- 4 cups (500g) bread flour or all-purpose flour
- 1⅔ cups (375g) warm water
- 1 cup (200g) active sourdough starter
- 2 teaspoons (10g) salt
Instructions
- In a large mixing bowl, combine the flour and warm water to form a shaggy dough.
- Allow the dough to rest for 30 minutes.
- Add the sourdough starter and salt; mix until fully blended.
- Cover and let it sit at room temperature.
- Every 30 minutes for 2 hours, perform a set of stretch and folds.
- After the final fold, let it rise for 6 to 8 hours until doubled in size.
- Transfer the dough to a floured surface and shape it into a loaf.
- Place it seam-side up in a floured proofing basket; cover and refrigerate for 8 to 12 hours.
- Preheat the oven to 450°F (232°C) with a Dutch oven inside.
- Remove the dough from the fridge, score the top, and lower it into the hot Dutch oven using parchment paper.
- Bake covered for 20 minutes, then uncover and bake for another 25 minutes until golden brown.
- Cool completely on a wire rack before slicing.
Notes
Store bread in a paper bag at room temperature; slice and freeze if not consumed within a few days.
