- 500 g potatoes (peeled and diced)
- 30 g butter (salted)
- 1 cup self-raising flour (or all-purpose flour plus 1 tsp baking powder)
- 1 tbsp butter (for cooking)
Instructions
- Place the diced potatoes in a pot of salted water and boil until tender, about 15-20 minutes. Drain and let them cool slightly.
- In a large bowl, mash the cooked potatoes until smooth. Add 30 g of butter while the potatoes are still warm for a creamy texture.
- Gradually stir in the self-raising flour until combined, using your hands if necessary to form a soft dough. If sticky, add a bit more flour.
- On a floured surface, roll out the dough about 1 cm thick and cut into rounds or triangles.
- Heat 1 tbsp of butter in a skillet over medium heat. Cook the scones for about 5-6 minutes on each side until golden brown.
- Transfer to a plate and enjoy while warm with butter or your favorite toppings.
Notes
For a twist, add herbs like chives or mix in grated cheddar cheese. Store leftovers in an airtight container for up to 2 days or freeze for longer storage.
