- 3 eggs
- 1/2 cup vegetable oil
- 1 cup water
- 8 oz cream cheese (for frosting)
- 2 cups powdered sugar
- 1 tsp vanilla extract
- Fresh strawberries (for the Santa hat)
- Whipped cream (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- Prepare the cake mix according to package instructions, combining with eggs, oil, and water.
- Fill the liners with batter, about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Meanwhile, beat cream cheese and powdered sugar together until smooth to make the frosting.
- Frost the cooled cupcakes generously with cream cheese frosting.
- Top each cupcake with an upside down strawberry to create the Santa hat effect.
