Description

Ingredients

  • 1/2 cup vegetable oil
  • 1 cup water
  • 8 oz cream cheese (for frosting)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • Fresh strawberries (for the Santa hat)
  • Whipped cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Prepare the cake mix according to package instructions, combining with eggs, oil, and water.
  3. Fill the liners with batter, about 2/3 full.
  4. Bake for 18-20 minutes or until a toothpick comes out clean.
  5. Cool cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  6. Meanwhile, beat cream cheese and powdered sugar together until smooth to make the frosting.
  7. Frost the cooled cupcakes generously with cream cheese frosting.
  8. Top each cupcake with an upside down strawberry to create the Santa hat effect.
