- 1/2 cup ranch dressing
- 1/4 cup grated parmesan cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried parsley or fresh parsley, chopped
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon lemon juice (optional)
- 1 1/2 pounds boneless, skinless chicken breasts or thighs, cubed
- Wooden or metal skewers
Instructions
- Prepare the marinade by whisking together ranch dressing, parmesan cheese, olive oil, garlic, parsley, black pepper, garlic powder, and lemon juice in a bowl.
- Marinate the chicken by placing it in a resealable plastic bag or shallow dish, pouring the marinade over it, and letting it rest in the fridge for at least 30 minutes or up to 2 hours.
- Soak wooden skewers in water for 15 minutes if using.
- Thread the marinated chicken onto the skewers, leaving some space between the pieces.
- Preheat the grill to medium-high heat and grill the skewers for 10-15 minutes, turning occasionally, until golden and cooked through, reaching an internal temperature of 165°F (75°C).
- Serve the skewers garnished with parsley and parmesan.
Notes
For a spicy kick, add chili flakes to the marinade. Substitute chicken with firm tofu for a vegetarian version.
