- 1 pound ground beef
- 1 cup bell peppers, diced
- 1 cup onions, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Green onions for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onions and bell peppers and sauté until soft.
- Add the minced garlic and cook for another minute.
- Add the ground beef, breaking it apart, and cook until browned.
- Stir in the Cajun seasoning and season with salt and pepper.
- Add the rice and chicken broth to the skillet. Bring to a boil, then cover and reduce the heat to low.
- Let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
- Fluff the rice with a fork and garnish with sliced green onions if desired. Serve hot.
