Description

A quick and delicious blend of tender chicken, sweet pineapple, and vibrant peppers served over fluffy jasmine rice.


Ingredients

  • 2 cups jasmine rice
  • 1 tablespoon vegetable oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 cup fresh pineapple chunks
  • 1 small red bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the jasmine rice according to the package instructions, then set aside to stay warm.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the diced chicken, seasoning with salt and pepper. Cook until the chicken is fully browned and cooked through, about 6-8 minutes. Remove the chicken and set aside.
  4. In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until fragrant and translucent.
  5. Stir in the diced red bell pepper and pineapple chunks. Cook for another 3-4 minutes until the pepper is tender and pineapple is warmed.
  6. In a small bowl, whisk together the soy sauce, honey, rice vinegar, and crushed red pepper flakes if using. Pour the sauce into the skillet, stirring to coat the vegetables and pineapple.
  7. Return the cooked chicken to the skillet and mix well. Allow everything to cook together for 2-3 minutes so the sauce thickens slightly and flavors blend.
  8. Serve the pineapple chicken mixture over the jasmine rice, garnished with sliced green onions. Enjoy your delicious meal!
