Description

A rich and savory Crock-Pot pepper steak recipe that is tender and bursting with flavor, perfect for family dinners or entertaining guests.


Ingredients

  • 1 1/2 lbs beef sirloin steak, sliced into strips
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup beef broth (or water)
  • 2 tablespoons cornstarch
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon ginger (fresh or ground)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons vegetable oil (for browning the steak)
  • Cooked white rice or noodles, for serving

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat. Add sliced beef in batches, browning for about 2-3 minutes on each side. Remove from the skillet and set aside.
  2. In the same skillet, sauté garlic, onions, and bell peppers until fragrant and slightly softened (about 2-3 minutes).
  3. In your Crock-Pot, combine soy sauce, beef broth, brown sugar, Worcestershire sauce, ginger, black pepper, and optional red pepper flakes. Stir well until the sugar dissolves.
  4. Add the browned beef and sautéed veggies to the Crock-Pot, stirring everything together to coat well with the sauce.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the beef is tender.
  6. About 30 minutes before serving, make a cornstarch slurry by mixing cornstarch with 2 tablespoons of water. Stir this into the Crock-Pot and cook on high for another 20-30 minutes to thicken the sauce.
  7. Serve your pepper steak over rice or noodles, garnished with additional sliced bell peppers or green onions.

Notes

Browning the meat adds depth of flavor. For a thicker sauce, use more cornstarch or cook longer after adding the slurry. Consider adding other veggies like snap peas or carrots.
