- 1 1/2 lbs beef sirloin steak, sliced into strips
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 1/4 cup beef broth (or water)
- 2 tablespoons cornstarch
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon ginger (fresh or ground)
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons vegetable oil (for browning the steak)
- Cooked white rice or noodles, for serving
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat. Add sliced beef in batches, browning for about 2-3 minutes on each side. Remove from the skillet and set aside.
- In the same skillet, sauté garlic, onions, and bell peppers until fragrant and slightly softened (about 2-3 minutes).
- In your Crock-Pot, combine soy sauce, beef broth, brown sugar, Worcestershire sauce, ginger, black pepper, and optional red pepper flakes. Stir well until the sugar dissolves.
- Add the browned beef and sautéed veggies to the Crock-Pot, stirring everything together to coat well with the sauce.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the beef is tender.
- About 30 minutes before serving, make a cornstarch slurry by mixing cornstarch with 2 tablespoons of water. Stir this into the Crock-Pot and cook on high for another 20-30 minutes to thicken the sauce.
- Serve your pepper steak over rice or noodles, garnished with additional sliced bell peppers or green onions.
Notes
Browning the meat adds depth of flavor. For a thicker sauce, use more cornstarch or cook longer after adding the slurry. Consider adding other veggies like snap peas or carrots.
