Description

A delightful Italian dish made with spaghetti, sautéed zucchini, garlic, and freshly grated parmesan cheese.


Ingredients

  • 400g Spaghetti
  • 2 medium-sized Zucchini, sliced
  • 100g Freshly grated Parmesan cheese (or to taste)
  • Extra virgin olive oil (enough for frying)
  • Salt (to taste)
  • Freshly ground pepper (to taste)
  • 2 cloves Minced garlic
  • Fresh basil leaves (for garnish)

Instructions

  1. Begin by boiling a pot of salted water. Add the spaghetti and cook according to package instructions until al dente.
  2. While that’s cooking, heat a generous amount of olive oil in a large skillet over medium heat. Add the sliced zucchini and fry until golden brown, about 5-7 minutes.
  3. Once the zucchini is ready, add the minced garlic and a splash of the pasta cooking water to the skillet, allowing it to simmer for a minute.
  4. Drain the spaghetti and transfer it directly into the pan with the zucchini. Toss everything gently to ensure the pasta is well coated with the zucchini mixture.
  5. Stir in the grated parmesan cheese, adjusting the seasoning with salt and pepper according to your taste.
  6. For a finishing touch, sprinkle fresh basil over the top before serving. Enjoy!
