- 400g Spaghetti
- 2 medium-sized Zucchini, sliced
- 100g Freshly grated Parmesan cheese (or to taste)
- Extra virgin olive oil (enough for frying)
- Salt (to taste)
- Freshly ground pepper (to taste)
- 2 cloves Minced garlic
- Fresh basil leaves (for garnish)
Instructions
- Begin by boiling a pot of salted water. Add the spaghetti and cook according to package instructions until al dente.
- While that’s cooking, heat a generous amount of olive oil in a large skillet over medium heat. Add the sliced zucchini and fry until golden brown, about 5-7 minutes.
- Once the zucchini is ready, add the minced garlic and a splash of the pasta cooking water to the skillet, allowing it to simmer for a minute.
- Drain the spaghetti and transfer it directly into the pan with the zucchini. Toss everything gently to ensure the pasta is well coated with the zucchini mixture.
- Stir in the grated parmesan cheese, adjusting the seasoning with salt and pepper according to your taste.
- For a finishing touch, sprinkle fresh basil over the top before serving. Enjoy!

Experiment with other seasonal vegetables or add grilled shrimp for extra protein.
