- 375 g cooking apples (e.g., Bramleys)
- 375 g eating apples (e.g., russets)
- 90 g butter (divided)
- 60 g caster sugar (plus extra for topping)
- Grated rind of 1 lemon
- 45 g plain flour (or cornflour)
- 500 ml whole milk
- 3 large egg yolks
- 1½ teaspoons vanilla bean paste or extract
- 60 g demerara sugar
- ½ teaspoon ground cinnamon
Instructions
- Preheat your oven to 180°C (350°F).
- Prepare Apples: Peel, core, and chop the cooking and eating apples into small pieces.
- Cook Apples: In a saucepan, melt 45 g of butter over medium heat. Add the chopped apples, 60 g caster sugar, and lemon rind. Cook for about 5–7 minutes until softened.
- Transfer the apple mixture to a baking dish.
- Make Roux: In a new saucepan, melt the remaining 45 g of butter over low heat. Stir in the flour to form a roux.
- Add Milk: Gradually whisk in the milk, cooking until slightly thickened.
- Incorporate Eggs: Remove from heat and whisk in the egg yolks and vanilla bean paste.
- Combine Mixtures: Pour the custard over the apple base in the baking dish.
- Finish: Mix the demerara sugar with cinnamon and sprinkle it over the top.
- Bake for about 20 minutes, or until the topping is golden brown.
Notes
Serve warm with whipped cream or vanilla ice cream for extra indulgence.
