  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

A simple yet elegant Italian bruschetta topped with fresh tomatoes, mozzarella, and basil, perfect for gatherings or as an appetizer.

Ingredients

Scale
  • 1 French baguette, sliced into 1/2 inch thick pieces
  • 2 large ripe tomatoes, diced
  • 1 cup fresh mozzarella, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons extra-virgin olive oil, plus more for brushing
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and arrange the baguette slices in a single layer.
  3. Brush each slice lightly with olive oil for even coverage.
  4. Toast the bread in the oven for about 5-7 minutes until golden and crispy, then take it out and set aside.
  5. In a large bowl, mix the diced tomatoes, mozzarella, and chopped basil.
  6. Add minced garlic, olive oil, and balsamic vinegar to the bowl, gently stirring to combine.
  7. Season the mixture with salt and freshly ground black pepper to taste.
  8. Let the mixture sit for about 10 minutes at room temperature to allow flavors to meld.
  9. Spoon the tomato-mozzarella mixture generously onto each toasted baguette slice.
  10. Drizzle with a little more olive oil on top if desired.
  11. Serve immediately and savor the burst of Italian flavors.

Notes

For a different flavor profile, substitute tomatoes with heirloom varieties or use burrata cheese instead of mozzarella.
