- 8 ounces pasta (rotini or penne)
- 4 ounces cured meats (salami or pepperoni, chopped)
- 4 ounces cheese (mozzarella or provolone, cubed)
- 1 cup cherry tomatoes (halved)
- 1 cup bell peppers (chopped)
- 1/2 cup black olives (sliced)
- 1/4 cup red onion (thinly sliced)
- 1/4 cup fresh basil (chopped)
- 1/2 cup Italian vinaigrette dressing
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Drain it, rinse under cold water, and let it cool completely.
- In a large mixing bowl, combine the cooled pasta, chopped cured meats, cubed cheese, halved cherry tomatoes, chopped bell peppers, sliced olives, thinly sliced red onion, and chopped basil.
- Drizzle with Italian vinaigrette dressing. Toss everything together to coat evenly.
- Season with salt and pepper to taste.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
Notes
For optimal freshness, add the vinaigrette just before serving and consider marinating olives for added flavor.
