Description

Ingredients

  • 2 pounds chicken breasts or thighs
  • 1 cup BBQ sauce
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Turn on your Instant Pot and select the ‘Sauté’ setting. Add olive oil and let it heat up.
  2. Season the chicken with garlic powder, onion powder, salt, and pepper.
  3. Place the seasoned chicken into the pot and brown on both sides for about 3-4 minutes each.
  4. Add chicken broth and BBQ sauce to the pot, stirring gently to combine.
  5. Close the lid and ensure the valve is in the sealing position.
  6. Set the Instant Pot to ‘Manual’ and cook on high pressure for 10 minutes.
  7. Once cooking time is done, let the pressure release naturally for 5 minutes before doing a quick release.
  8. Remove the chicken from the pot, shred it using two forks, and then return it to the pot.
  9. Mix with additional BBQ sauce if desired. Serve on buns for delicious pulled BBQ chicken sandwiches.

Customize BBQ sauce to your liking; store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
