Instructions
- Combine sugar and cornstarch in a large saucepan.
- Whisk in your milk and beaten egg yolks.
- Introduce the salt and finely grated lemon zest.
- Cook the mixture over medium heat, stirring until it thickens.
- Remove from heat, add lemon juice and butter, then stir until combined.
- If desired, strain the pudding to achieve a silky texture.
- Chill for at least two hours before serving.
Notes
Garnish with whipped cream and lemon zest for added flair. For a dairy-free option, use coconut or almond milk.
