Ingredients

  • 8 ounces pasta (penne or rotini)
  • 2 cups mixed vegetables (zucchini, bell peppers, cherry tomatoes)
  • 1 cup marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta until al dente according to package instructions. Drain and set aside.
  3. In a large mixing bowl, combine the cooked pasta, mixed vegetables, marinara sauce, ricotta cheese, oregano, garlic powder, salt, and pepper.
  4. Transfer everything into a greased baking dish.
  5. Evenly sprinkle the mozzarella and Parmesan cheese on top.
  6. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
  7. Allow the dish to cool slightly before serving.
  8. Garnish with fresh basil for that perfect finishing touch.
