Ingredients

- 8 ounces pasta (penne or rotini)
- 2 cups mixed vegetables (zucchini, bell peppers, cherry tomatoes)
- 1 cup marinara sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the pasta until al dente according to package instructions. Drain and set aside.
- In a large mixing bowl, combine the cooked pasta, mixed vegetables, marinara sauce, ricotta cheese, oregano, garlic powder, salt, and pepper.
- Transfer everything into a greased baking dish.
- Evenly sprinkle the mozzarella and Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
- Allow the dish to cool slightly before serving.
- Garnish with fresh basil for that perfect finishing touch.
