- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 2 cups mixed veggies (bell peppers, zucchini, broccoli, etc.)
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
- Dip each chicken breast into the breadcrumb mixture, ensuring each piece is well-coated.
- Place the breadcrumb-coated chicken on a baking sheet.
- Toss your mixed veggies in olive oil, adding salt and pepper, then spread them around the chicken on the sheet pan.
- Bake for 20 minutes.
- Once 20 minutes are up, remove the pan from the oven, pour marinara sauce over each chicken breast, and sprinkle with mozzarella cheese.
- Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Notes
For a crispier texture, try using panko breadcrumbs instead of regular ones. You can also marinate the chicken in Italian dressing beforehand for added flavor.
