  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 cups mixed veggies (bell peppers, zucchini, broccoli, etc.)
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
  3. Dip each chicken breast into the breadcrumb mixture, ensuring each piece is well-coated.
  4. Place the breadcrumb-coated chicken on a baking sheet.
  5. Toss your mixed veggies in olive oil, adding salt and pepper, then spread them around the chicken on the sheet pan.
  6. Bake for 20 minutes.
  7. Once 20 minutes are up, remove the pan from the oven, pour marinara sauce over each chicken breast, and sprinkle with mozzarella cheese.
  8. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
