- 2 large sprigs fresh basil
- 6 garlic cloves (minced)

- 1 small yellow onion (diced into 1/4-inch pieces)

- 3 tbsp extra-virgin olive oil
- 6 boneless, skinless chicken cutlets (1.5 lb total, pounded to 1/4-inch thickness)
- 1 cup panko bread crumbs
- 1 cup vegetable oil
- 1 cup finely grated Parmesan
- 2 large eggs (beaten thoroughly)
- 1 tsp garlic powder
- 3/4 cup all-purpose flour
- Chopped fresh basil for serving
- 1 cup shredded mozzarella
Instructions
- Heat the olive oil in a large skillet over medium heat. Add diced onions and minced garlic; sauté until softened, about 5 minutes.
- Pour in crushed tomatoes, seasoning with kosher salt and black pepper. Simmer for about 15 minutes.
- Prepare the chicken with a dredging station: seasoned flour, beaten eggs, and panko mixed with Parmesan.
- Pound chicken cutlets to 1/4 inch, season, then dredge through flour, eggs, and breadcrumbs.
- Heat vegetable oil over medium-high and fry chicken cutlets until golden, about 3-4 minutes per side.
- Preheat oven to 400°F (200°C). Layer sauce in a baking dish, add chicken, and top with more sauce and cheeses.
- Bake for 20-25 minutes until cheese is bubbly. Garnish with fresh basil.
