Description

Ingredients

  • 2 chicken breasts
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1/4 cup butter
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • Fresh parsley for garnish

Instructions

  1. Begin by seasoning the chicken breasts generously with salt and pepper.
  2. Dredge each seasoned chicken breast in flour, ensuring you shake off any excess.
  3. In a bowl, beat the eggs and mix in the grated Parmesan cheese.
  4. Dip the floured chicken into the egg mixture, coating it well.
  5. In a skillet, heat olive oil and butter over medium heat until melted and hot.
  6. Cook the chicken for about 5-7 minutes on each side until golden brown and cooked through.
  7. Once cooked, remove the chicken from the skillet and set it aside.
  8. In the same skillet, add chicken broth and lemon juice. Bring to a simmer.
  9. Return the chicken to the skillet and spoon the lovely sauce over it.
  10. Garnish with fresh parsley before serving.

Notes

Great served with a light salad or garlic bread. Can substitute chicken for turkey or use gluten-free flour.
