- 2 chicken breasts
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 eggs
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1/4 cup butter
- 1/2 cup chicken broth
- 1/4 cup lemon juice
- Fresh parsley for garnish
Instructions
- Begin by seasoning the chicken breasts generously with salt and pepper.
- Dredge each seasoned chicken breast in flour, ensuring you shake off any excess.
- In a bowl, beat the eggs and mix in the grated Parmesan cheese.
- Dip the floured chicken into the egg mixture, coating it well.
- In a skillet, heat olive oil and butter over medium heat until melted and hot.
- Cook the chicken for about 5-7 minutes on each side until golden brown and cooked through.
- Once cooked, remove the chicken from the skillet and set it aside.
- In the same skillet, add chicken broth and lemon juice. Bring to a simmer.
- Return the chicken to the skillet and spoon the lovely sauce over it.
- Garnish with fresh parsley before serving.
Notes
Great served with a light salad or garlic bread. Can substitute chicken for turkey or use gluten-free flour.
