- 1/2 lb cooked shrimp, finely chopped
- 1/2 lb cooked crab meat, shredded
- 1 cup shredded Monterey Jack cheese
- 1/2 cup cream cheese, softened
- 1/2 cup queso dip (mild or spicy)
- 1 tbsp fresh cilantro, chopped
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 8 small flour tortillas
- 2 tbsp butter or oil (for frying)
Instructions
- In a large bowl, combine the finely chopped shrimp, shredded crab, Monterey Jack cheese, softened cream cheese, queso, fresh cilantro, garlic powder, and smoked paprika. Stir until well incorporated.
- Take an 8-inch tortilla and place 2-3 tablespoons of the seafood mixture in the center. Roll it tightly and secure with a toothpick.
- Heat butter or oil in a skillet over medium heat. Once hot, gently place the filled tortillas in the skillet and fry until golden brown and crunchy, about 3-4 minutes on each side.
- Remove the toothpicks, plate your quesos, and drizzle warm queso over the top. Sprinkle with fresh cilantro, and serve immediately.
Notes
For best flavor, use fresh crab and shrimp. Feel free to experiment with different cheese varieties and spices.
