A quick and delicious Chicken Lo Mein dish featuring tender chicken, colorful vegetables, and savory noodles.
Ingredients

- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 carrots, thinly sliced
- 2 green onions, chopped
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh garlic, minced
Instructions
- Cook the lo mein noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet or wok, heat a tablespoon of sesame oil over medium-high heat. Add the diced chicken and sauté until golden brown and fully cooked, roughly 6-8 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add a little more oil if necessary and toss in the sliced bell peppers, carrots, and green onions. Stir-fry for about 3-4 minutes until the veggies are tender yet crisp.
- Return the cooked chicken to the skillet. Add the drained lo mein noodles, soy sauce, minced garlic, and any additional spices you like. Toss everything together until well mixed and heated through.
- Enjoy your Chicken Lo Mein hot, with a drizzle of extra soy sauce on top if desired.
