Delicious and wholesome almond flour date cookies, naturally sweetened and gluten-free.
Ingredients

- 1 cup almond flour
- 1 cup pitted dates, chopped
- 1/4 cup coconut oil, melted
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, baking soda, and salt; mix well.
- In a separate bowl, whisk together the melted coconut oil and vanilla extract. If using honey or maple syrup, add it here.
- Fold in the chopped dates until combined with the wet ingredients.
- Gradually add the dry mixture to the wet mixture, stirring until just combined. Optionally, fold in the chocolate chips.
- Scoop tablespoons of dough onto the baking sheet, leaving space between each cookie.
- Flatten each cookie slightly with the back of a spoon.
- Bake for 10-12 minutes, or until the edges turn golden brown.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a chewier texture, add an extra tablespoon of coconut oil. Chilling the dough for about 30 minutes helps retain shape.
