Description

Delicious and wholesome almond flour date cookies, naturally sweetened and gluten-free.


Ingredients

  • 1 cup almond flour
  • 1 cup pitted dates, chopped
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, baking soda, and salt; mix well.
  3. In a separate bowl, whisk together the melted coconut oil and vanilla extract. If using honey or maple syrup, add it here.
  4. Fold in the chopped dates until combined with the wet ingredients.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined. Optionally, fold in the chocolate chips.
  6. Scoop tablespoons of dough onto the baking sheet, leaving space between each cookie.
  7. Flatten each cookie slightly with the back of a spoon.
  8. Bake for 10-12 minutes, or until the edges turn golden brown.
  9. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a chewier texture, add an extra tablespoon of coconut oil. Chilling the dough for about 30 minutes helps retain shape.
