Instructions
- Prep the crust: In a mixing bowl, combine the crushed vanilla wafers and melted butter until well mixed. Press this mixture firmly into the bottom of a springform pan to form the crust.
- Make the cheesecake filling: In another bowl, beat the softened cream cheese and powdered sugar together until the mixture is smooth and creamy.
- Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold this whipped cream into the cream cheese mixture along with the vanilla extract, ensuring not to deflate the whipped cream.
- Layer the ingredients: Spread a layer of cookie butter over the crust, add banana slices, and then top with the cheesecake mixture.
- Chill to set: Refrigerate the cheesecake for at least 240 minutes or until it’s completely set.
