  • ¼ teaspoon salt
  • ½ teaspoon xanthan gum or psyllium husk powder
  • Optional: ½ cup finely ground almond flour

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your loaf pan by lining it with parchment paper or greasing it generously.
  2. In a large bowl, whisk together the eggs, Greek yogurt, and melted butter (or coconut oil) until the mixture is smooth and creamy.
  3. Add the baking powder, salt, and xanthan gum (or psyllium husk powder) into the bowl. If using almond flour, pour it in during this step. Stir until the batter is well-combined and slightly thickened.
  4. Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
  5. Bake in your preheated oven for 35–45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  6. Cool the bread in the pan for about 10 minutes before transferring to a wire rack. Let it cool completely before slicing.
