Ingredients

- 1/4 cup chia seeds
- 1 cup almond milk (or preferred milk)
- 1/2 cup Greek yogurt (or dairy-free yogurt for a vegan option)
- 1/4 cup honey or maple syrup
- Juice and zest of 1 lemon
- A pinch of salt
Instructions
- In a medium bowl, mix the chia seeds and almond milk. Stir well and let it sit for about 10 minutes.
- In another bowl, combine the Greek yogurt, honey (or maple syrup), lemon juice, lemon zest, and salt. Mix until smooth and creamy.
- After the chia seeds have absorbed the milk, give the mixture another good stir to break up any clumps.
- Layer the chia pudding and lemon cream in serving glasses or bowls, alternating between the two.
- Chill for at least one hour in the refrigerator before serving to allow the flavors to meld.
Notes
Add fresh berries or toasted coconut on top for extra flavor. Store leftovers in an airtight container in the refrigerator for up to three days.
