- 3 cups cooked white beans (480 grams)
- 2 large tomatoes, finely chopped
- 1.5 cups cherry tomatoes (200 grams)
- 1 medium onion, finely chopped
- 2.5 cups chopped spinach (200 grams)
- 2 large garlic cloves, minced
- 1 tablespoon tomato paste
- 1 teaspoon Italian seasoning
- ½ teaspoon dried red chili flakes
- ¼ teaspoon ground black pepper
- Salt to taste
- 2 cups shredded cheese (200 grams)
- 1 tablespoon olive oil
Instructions
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Sprinkle in the Italian seasoning, red pepper flakes, and ground black pepper. Sauté for another minute.
- Stir in the tomato paste and cook for about 30 seconds.
- Add the chopped tomatoes and salt; let it simmer on medium heat for 8-10 minutes, or until soft.
- Toss in the cherry tomatoes and cook for an additional 10-12 minutes, covering the skillet.
- Add the cooked white beans and spinach, cooking until the spinach wilts, around 5-7 minutes. Turn off the heat.
- Transfer the mixture to a casserole dish and top with the shredded cheese.
- Cover with aluminum foil and bake in a preheated oven at 200℃ (400℉) for 30 minutes.
Notes
Add fresh herbs like basil or parsley before serving for a fresh burst of flavor. Roasting garlic before adding can enhance the taste.
