Ingredients

Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat a splash of oil and sauté the chopped onion and red bell pepper until they’re soft, about 5 minutes.
- Toss in the black beans, corn, and spices, cooking for an additional 2-3 minutes until everything is well combined and heated through.
- Take a corn tortilla and fill it with the bean mixture, rolling it tightly.
- Place your rolled taquitos seam-side down on a baking sheet.
