  • Black beans (canned or cooked from scratch)
  • Sweet corn (frozen or fresh)
  • Red bell pepper (chopped)
  • Onion (chopped)
  • Spices (cumin and chili powder)

  • Salsa (for dipping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat a splash of oil and sauté the chopped onion and red bell pepper until they’re soft, about 5 minutes.
  3. Toss in the black beans, corn, and spices, cooking for an additional 2-3 minutes until everything is well combined and heated through.
  4. Take a corn tortilla and fill it with the bean mixture, rolling it tightly.
  5. Place your rolled taquitos seam-side down on a baking sheet.
