Ingredients

- 4 medium sweet potatoes
- 1/2 cup coconut milk
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 cup pecans (chopped)
- 1/4 cup brown sugar
- 2 tablespoons coconut oil (melted)
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and cube the sweet potatoes, then boil them until tender, about 15-20 minutes.
- Drain the sweet potatoes and add them to a mixing bowl.
- Mash the sweet potatoes and mix in coconut milk, maple syrup, vanilla, cinnamon, nutmeg, and salt until well combined.
- Pour the sweet potato mixture into a baking dish.
- In another bowl, mix the pecans, brown sugar, and melted coconut oil together and sprinkle them over the sweet potato layer.
- Bake for 25-30 minutes or until the topping is golden and crispy.
- Serve warm as a side dish.
