Ingredients

  • 4 medium sweet potatoes
  • 1/2 cup coconut milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup pecans (chopped)
  • 1/4 cup brown sugar
  • 2 tablespoons coconut oil (melted)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and cube the sweet potatoes, then boil them until tender, about 15-20 minutes.
  3. Drain the sweet potatoes and add them to a mixing bowl.
  4. Mash the sweet potatoes and mix in coconut milk, maple syrup, vanilla, cinnamon, nutmeg, and salt until well combined.
  5. Pour the sweet potato mixture into a baking dish.
  6. In another bowl, mix the pecans, brown sugar, and melted coconut oil together and sprinkle them over the sweet potato layer.
  7. Bake for 25-30 minutes or until the topping is golden and crispy.
  8. Serve warm as a side dish.
