Delicious vegan danishes bursting with fresh strawberry flavor, perfect for brunch or a sweet afternoon snack.

- 1 sheet of puff pastry (store-bought)
- 1 cup strawberries, sliced (fresh or frozen)
- 1/4 cup sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon vanilla extract
- 1/2 cup vegan cream cheese
- 1 tablespoon lemon juice
- Powdered sugar for dusting
Instructions
- Preheat your oven to 400°F (200°C).
- On a floured surface, roll out the puff pastry and cut it into squares.
- In a mixing bowl, combine the sliced strawberries, sugar, cornstarch, and vanilla extract. Set aside.
- In another bowl, mix the vegan cream cheese and lemon juice together until smooth.
- Take a spoonful of the cream cheese mixture and place it in the center of each pastry square, then add the strawberry mixture on top.
- Gently fold the corners of pastry squares towards the center and pinch to seal.
- Bake for 15-20 minutes or until golden brown.
- Allow to cool slightly before dusting with powdered sugar and enjoying.
Notes
Best enjoyed fresh and warm. Can be garnished with fresh mint or served with vegan ice cream.
