Description

Delicious vegan danishes bursting with fresh strawberry flavor, perfect for brunch or a sweet afternoon snack.


Ingredients

  • 1 sheet of puff pastry (store-bought)
  • 1 cup strawberries, sliced (fresh or frozen)
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1/2 cup vegan cream cheese
  • 1 tablespoon lemon juice
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a floured surface, roll out the puff pastry and cut it into squares.
  3. In a mixing bowl, combine the sliced strawberries, sugar, cornstarch, and vanilla extract. Set aside.
  4. In another bowl, mix the vegan cream cheese and lemon juice together until smooth.
  5. Take a spoonful of the cream cheese mixture and place it in the center of each pastry square, then add the strawberry mixture on top.
  6. Gently fold the corners of pastry squares towards the center and pinch to seal.
  7. Bake for 15-20 minutes or until golden brown.
  8. Allow to cool slightly before dusting with powdered sugar and enjoying.

Notes

Best enjoyed fresh and warm. Can be garnished with fresh mint or served with vegan ice cream.
