  • 1 lb green beans, trimmed and cut into 1” pieces
  • 2 tablespoons vegan butter
  • 8 oz package baby portobello mushrooms, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour (or gluten-free flour, if needed)
  • 1 1/2 cups unsweetened, unflavored non-dairy milk
  • 1/2 cup vegetable broth
  • 1 teaspoon soy sauce
  • 1 package (6 oz) French crispy fried onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan with a steamer basket, add trimmed green beans. Steam for about 5-7 minutes or until they’re fork-tender.
  3. Melt vegan butter in a large skillet over medium-high heat. Next, add your chopped mushrooms and sauté for about 5 minutes.
  4. Incorporate the minced garlic and cook for an additional minute until fragrant.
  5. Sprinkle flour evenly over the mushrooms and stir well until the flour absorbs the moisture and forms a paste.
  6. Gradually whisk in the non-dairy milk, vegetable broth, and soy sauce. Bring the mixture to a gentle simmer for about 5 minutes, stirring frequently, until it thickens slightly.
  7. Fold in the steamed green beans and 1/3 cup of the crispy fried onions. Transfer the mixture to an 8×8 inch baking dish if your skillet is not oven-safe.
  8. Sprinkle the remaining French fried onions over the top layer.
  9. Bake for approximately 11-15 minutes or until the casserole bubbles and is heated through.
  10. Allow it to cool for about 5 minutes before serving.

Notes

For extra flavor, consider adding a pinch of nutmeg to the creamy sauce or a sprinkle of nutritional yeast. Leftovers can be refrigerated for 3-4 days or frozen for up to 3 months.
