- 1 lb breakfast sausage links
- 4 large eggs
- 2 cups whole milk (or almond milk)
- 1/2 cup maple syrup
- 1 cup shredded cheddar cheese (or mozzarella)

Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with non-stick spray.
- Cook the breakfast sausage links over medium heat until golden brown, then let them cool and slice into bite-sized pieces.
- In a mixing bowl, whisk together the pancake mix, milk, and eggs until you have a smooth, thick batter.
- Pour half of the pancake batter into the prepared baking dish.
- Layer half of the cooked sausage and half of the shredded cheese over the batter.
- Repeat the layering with the remaining pancake batter, sausage, and cheese. Pour any leftover batter on top.
- Bake for 30-35 minutes or until the top is golden brown and fragrant. Drizzle with maple syrup just before serving.
Notes
You can easily switch the cheese to include pepper jack for a spicy kick or substitute turkey sausage for a leaner option. Make it ahead by preparing the casserole the night before.
