A hearty and comforting Italian soup with Italian sausage, potatoes, and kale, perfect for warming up on chilly days.

- 1 pound Italian sausage (mild or spicy)
- 4 medium potatoes (Russet or Yukon Gold, diced)
- 1 large onion (diced)
- 3 cloves garlic (minced)
- 6 cups chicken broth
- 1 bunch kale (chopped, about 4 cups)
- 1 cup heavy cream (or half-and-half for a lighter version)
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper (to taste)
- Olive oil (for sautéing)
Instructions
- In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat.
- Add the Italian sausage, breaking it apart with a wooden spoon, and cook for about 5-7 minutes until browned.
- If there’s excess fat, drain it off.
- Add the diced onion and sauté for 3-4 minutes until softened.
- Stir in the minced garlic for about a minute until fragrant.
- Toss in the diced potatoes and pour in the chicken broth. Bring to a boil, then lower heat and simmer for approximately 15 minutes, until potatoes are tender.
- Add the chopped kale and red pepper flakes (if desired), stir well, and cook for another 5 minutes.
- Lower the heat further and stir in the heavy cream. Season with salt and pepper and warm through for an additional 2-3 minutes.
- Serve hot in bowls, ideally with some crusty bread on the side.
Notes
Add a splash of white wine while sautéing for added depth of flavor. For a vegetarian version, substitute sausage with vegetarian options and use vegetable broth.
