Description

A hearty and comforting Italian soup with Italian sausage, potatoes, and kale, perfect for warming up on chilly days.


Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 4 medium potatoes (Russet or Yukon Gold, diced)
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1 bunch kale (chopped, about 4 cups)
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper (to taste)
  • Olive oil (for sautéing)

Instructions

  1. In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat.
  2. Add the Italian sausage, breaking it apart with a wooden spoon, and cook for about 5-7 minutes until browned.
  3. If there’s excess fat, drain it off.
  4. Add the diced onion and sauté for 3-4 minutes until softened.
  5. Stir in the minced garlic for about a minute until fragrant.
  6. Toss in the diced potatoes and pour in the chicken broth. Bring to a boil, then lower heat and simmer for approximately 15 minutes, until potatoes are tender.
  7. Add the chopped kale and red pepper flakes (if desired), stir well, and cook for another 5 minutes.
  8. Lower the heat further and stir in the heavy cream. Season with salt and pepper and warm through for an additional 2-3 minutes.
  9. Serve hot in bowls, ideally with some crusty bread on the side.

Notes

Add a splash of white wine while sautéing for added depth of flavor. For a vegetarian version, substitute sausage with vegetarian options and use vegetable broth.
