Ingredients

  • 1 can of white beans (cannellini or great northern)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup chopped kale or spinach
  • 1 carrot, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, diced carrots, and celery. Cook for 5–7 minutes until vegetables soften.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Toss in the white beans, vegetable broth, dried thyme, dried rosemary, and season with salt and pepper.
  5. Bring the soup to a boil, then reduce heat and let it simmer for 20-25 minutes.
  6. Add the chopped kale or spinach and cook until wilted, about 5 minutes.
  7. Taste and adjust seasoning. Serve with rustic bread for dipping!
