- 1 can of white beans (cannellini or great northern)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup chopped kale or spinach
- 1 carrot, diced
- 2 stalks celery, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion, diced carrots, and celery. Cook for 5–7 minutes until vegetables soften.
- Stir in minced garlic and cook for another minute until fragrant.
- Toss in the white beans, vegetable broth, dried thyme, dried rosemary, and season with salt and pepper.
- Bring the soup to a boil, then reduce heat and let it simmer for 20-25 minutes.
- Add the chopped kale or spinach and cook until wilted, about 5 minutes.
- Taste and adjust seasoning. Serve with rustic bread for dipping!
