A healthy twist on the classic Italian dessert, this Tiramisu Chia Pudding combines creamy Greek yogurt and chia seeds with rich espresso flavors for a delightful make-ahead treat.

- 2 cups plain Greek yogurt
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 cup milk of your choice (dairy or plant-based)
- ½ cup chia seeds
- 1.5 tablespoons instant espresso powder
- A pinch of salt
- 1 cup plain Greek yogurt (for topping)
- 2 teaspoons maple syrup (for topping)
- 1 teaspoon vanilla extract (for topping)
- Unsweetened cocoa powder (for dusting)
Instructions
- Gather all the pudding base components and measure them out.
- In a high-speed blender, combine Greek yogurt, maple syrup, vanilla extract, milk, chia seeds, espresso powder, and salt. Blend on medium-high for about 60 seconds until smooth and mousse-like.
- Divide the blended pudding equally into four jars. Smooth the tops with a spoon.
- In a separate bowl, whisk together 1 cup Greek yogurt, 2 teaspoons maple syrup, and 1 teaspoon vanilla extract until smooth.
- Spoon the yogurt topping over each pudding jar, smoothing it out.
- Generously sprinkle unsweetened cocoa powder over the top of each jar.
- Cover the jars and refrigerate for at least 2 hours or overnight for best results.
- Serve chilled and optionally stir the cocoa into the pudding before enjoying.
Notes
For a thicker consistency, let the pudding chill longer. Adjust the sweetness by tasting the pudding base after blending.
