Ingredients

  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup milk of your choice (dairy or plant-based)
  • ½ cup chia seeds
  • 1.5 tablespoons instant espresso powder
  • A pinch of salt
  • 1 cup plain Greek yogurt (for topping)
  • 2 teaspoons maple syrup (for topping)
  • 1 teaspoon vanilla extract (for topping)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. Gather all the pudding base components and measure them out.
  2. In a high-speed blender, combine Greek yogurt, maple syrup, vanilla extract, milk, chia seeds, espresso powder, and salt. Blend on medium-high for about 60 seconds until smooth and mousse-like.
  3. Divide the blended pudding equally into four jars. Smooth the tops with a spoon.
  4. In a separate bowl, whisk together 1 cup Greek yogurt, 2 teaspoons maple syrup, and 1 teaspoon vanilla extract until smooth.
  5. Spoon the yogurt topping over each pudding jar, smoothing it out.
  6. Generously sprinkle unsweetened cocoa powder over the top of each jar.
  7. Cover the jars and refrigerate for at least 2 hours or overnight for best results.
  8. Serve chilled and optionally stir the cocoa into the pudding before enjoying.

Notes

For a thicker consistency, let the pudding chill longer. Adjust the sweetness by tasting the pudding base after blending.
