- 3/4 cup butter (softened)
- 1/2 cup lightly packed brown sugar
- 1 egg (or flax mixture for a vegan version)
- 1/2 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 tsp salt
- 1/4 cup jam of choice (strawberry, raspberry, or apricot)
Instructions
- Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
- Using an electric mixer, cream together the softened butter and brown sugar on high speed until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the flour and salt, mixing until a soft dough forms.
- Roll the dough into 1-inch balls and place them on your prepared baking sheet, spacing them 1½ inches apart.
- Make a heart-shaped indentation in the center of each ball by gently pressing your thumb or the back of a teaspoon twice.
- Bake for 12–15 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack. If any indentations have filled in, reshape them while still warm.
- Once cooled, add a small dollop of your chosen jam into each heart-shaped center.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer freshness, freeze them for about three months.
