- 2 (8-ounce) packages cream cheese, softened
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 (10-ounce) can Rotel tomatoes with green chilies, drained
- 1 (15-ounce) can refried beans
- 1 tablespoon taco seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 1/2 cup sliced green onions
- Tortilla chips, for serving
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, blend the softened cream cheese and sour cream until the mixture is smooth and creamy.
- Stir in the refried beans, drained Rotel tomatoes, and taco seasoning until evenly combined.
- Mix in the garlic powder, onion powder, paprika, ground cumin, and black pepper.
- Fold in 1 cup of the shredded cheddar cheese and half of the sliced green onions.
- Spread the mixture evenly into a baking dish.
- Top with the remaining 1 cup of shredded cheddar cheese.
- Bake for 25–30 minutes, or until the cheese is melted and bubbling.
- Once out of the oven, let it cool slightly. Garnish with the remaining green onions before serving.
- Serve hot with tortilla chips.
Notes
For an extra kick, consider adding diced jalapeños or use Pepper Jack cheese for a spicy twist.
