- 1 cup shredded Jack cheese
- 2 tablespoons olive oil
- 2–3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- Salt and pepper to taste
- Chopped green onions and paprika for topping
Instructions
- Preheat your oven to 375°F (190°C).
- Rub olive oil over the chicken breasts, seasoning them generously with salt and pepper.
- In a skillet heated over medium-high heat, sear the chicken breasts for about 5 minutes on each side until they’re golden brown.
- Add the minced garlic to the skillet, cooking for 30 seconds until fragrant.
- Pour in the chicken broth, scraping the bottom of the pan to deglaze it while letting it simmer.
- Stir in the sour cream until well combined, allowing the sauce to bubble for about 5 minutes.
- Top each chicken breast with shredded Jack cheese, then transfer the skillet to the oven.
- Bake for approximately 15 minutes or until the cheese is melted and bubbly.
- Garnish with chopped green onions and a sprinkle of paprika before serving.
Notes
Pairs well with mashed potatoes, steamed vegetables, or warm tortillas for a Tex-Mex twist. For longer storage, freeze portions for up to a month.
