Ingredients

- 3–4 boneless, skinless chicken breasts
- 1 cup shredded Jack cheese
- 2 tablespoons olive oil
- 2–3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- Salt and pepper to taste
- Chopped green onions for topping
- Paprika for topping
Instructions
- Preheat your oven to 375°F (190°C).
- Rub the chicken breasts with olive oil and season generously with salt and pepper.
- Heat a skillet over medium-high heat. Sear the chicken for about 5 minutes on each side until golden brown.
- Sprinkle in the minced garlic and cook for another 30 seconds.
- Pour in the chicken broth and let it simmer.
- Stir in the sour cream and let simmer for around 5 minutes.
- Transfer the chicken to a baking dish, top with Jack cheese, and bake for about 15 minutes or until the cheese is melted and bubbly.
- Garnish with chopped green onions and a sprinkle of paprika before serving.
Notes
Feel free to experiment with different cheeses or add a spicy kick with jalapeños.
