Instructions
- Marinate the Chicken: In a bowl, mix avocado oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper. Add the chicken thighs and coat well. Let them marinate for at least 15-20 minutes.
- Cook the Chicken: Heat a skillet over medium-high heat. Sear the chicken thighs for about 5-7 minutes on each side until fully cooked. Remove and set aside to rest.
- Prepare the Corn: In the same skillet, add the sweet corn and sauté for 2-3 minutes until heated through.
- Mix the Dressing: In a small bowl, combine sour cream and mayonnaise, adjusting with lime juice, salt, and pepper to taste.
- Assemble Your Bowl: Start with a base of warm rice, then add sliced chicken, sautéed corn, red onion, and creamy dressing. Top with cotija cheese, chili powder, cilantro, and lime wedges.

Notes
