- 1 cup cooked rice or quinoa
- 1/2 cup black beans, drained and rinsed
- 1/2 cup diced tomatoes
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- Optional: Tortilla chips for topping
Instructions
- In a large bowl, combine the cooked chicken, corn, rice or quinoa, black beans, diced tomatoes, and avocado.
- Squeeze lime juice over the mixture and add salt and pepper to taste.
