- 1 avocado, diced
- 1 cup shredded lettuce

- 1 packet taco seasoning

Instructions
- In a large skillet, cook the ground chicken or beef over medium heat until browned. Drain excess fat.
- Add taco seasoning and 1/4 cup water to the skillet, stir, and let simmer for 5 minutes.
- In a serving bowl, layer cooked rice as the base, followed by seasoned meat, black beans, corn, and diced tomatoes.
