  • 1 cup black beans, drained and rinsed

  • 1 cup diced tomatoes (fresh or canned)
  • 1 avocado, diced
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or your favorite blend)
  • 1 packet taco seasoning
  • Sour cream (optional)
  • Fresh cilantro (optional)

Instructions

  1. In a large skillet, cook the ground chicken or beef over medium heat until browned. Drain excess fat.
  2. Add taco seasoning and 1/4 cup water to the skillet, stir, and let simmer for 5 minutes.
  3. In a serving bowl, layer cooked rice as the base, followed by seasoned meat, black beans, corn, and diced tomatoes.
  4. Top with avocado, shredded lettuce, and cheese. Add sour cream if desired.
