- 0.33 cup chicken stock (80ml)
- 1 tbsp rice vinegar
- 1 tbsp light soy sauce
- 0.5 tsp chili flakes (optional, for a hint of heat)
- 2 tbsp cornstarch
- 4 tbsp cold water (for slurry)
- 1 tbsp fresh parsley, finely chopped
- Cooked rice (preferably jasmine or basmati)
Instructions
- Pat chicken pieces dry with paper towels and season with salt and pepper, ensuring an even coating. Set aside.
- Mix minced garlic, honey, chicken stock, rice vinegar, soy sauce, and chili flakes in a liquid measuring cup until combined.
- Create a cornstarch slurry by mixing cornstarch with cold water in a small bowl until smooth.
- Heat a large skillet over medium-high heat with more vegetable oil and butter. Sear chicken pieces in a single layer, cooking for 3 to 4 minutes on each side until golden-brown and cooked through (165°F internal temp). Transfer to a clean plate.
- Reduce heat to medium-low and add the honey garlic sauce to the skillet, scraping up any browned bits. Bring to a gentle simmer.
- Whisk the cornstarch slurry again and slowly drizzle it into the sauce while stirring. Continue cooking for about 1 minute until thickened into a glossy glaze.
- Return the seared chicken to the skillet, tossing to coat in the sauce. Simmer for an additional 1 to 2 minutes.
- Transfer to a serving plate, garnish with parsley, and serve over cooked rice.
