- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 can (15 oz) pineapple chunks, drained
- Salt and pepper to taste
- Sliced green onions for garnish
Instructions
- In a mixing bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger until well combined.
- Season the chicken breasts with salt and pepper, then place them in your crock pot.
- Pour the pineapple sauce over the seasoned chicken and add the drained pineapple chunks on top.
- Cover the crock pot; cook on low for 5-6 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once it’s cooked, serve it warm over rice and garnish with sliced green onions.
Notes
For a healthier version, use low-sodium soy sauce or substitute honey for brown sugar. Leftovers can be refrigerated for up to 3-4 days or frozen for up to 3 months.
