Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 can (15 oz) pineapple chunks, drained
  • Salt and pepper to taste
  • Sliced green onions for garnish

Instructions

  1. In a mixing bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger until well combined.
  2. Season the chicken breasts with salt and pepper, then place them in your crock pot.
  3. Pour the pineapple sauce over the seasoned chicken and add the drained pineapple chunks on top.
  4. Cover the crock pot; cook on low for 5-6 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Once it’s cooked, serve it warm over rice and garnish with sliced green onions.

Notes

For a healthier version, use low-sodium soy sauce or substitute honey for brown sugar. Leftovers can be refrigerated for up to 3-4 days or frozen for up to 3 months.
