- 1 pound ground beef
- 1 cup rice
- 1 can black beans
- 1 cup shredded cheese
- 1 cup diced tomatoes
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- 2 cups beef broth
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the onion, bell pepper, and garlic to the skillet and sauté until the vegetables are tender.
- Stir in the rice, black beans, diced tomatoes, taco seasoning, and beef broth.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.
- Stir in the cheese until melted and well combined.
- Season with salt and pepper to taste.
- Garnish with chopped cilantro before serving.
