Scale

- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & pepper to taste
- 1 tbsp olive oil
- 1½ cups corn (fresh, frozen, or canned)
- 2 tbsp mayonnaise
- 2 tbsp sour cream or Greek yogurt
- ¼ cup cotija cheese (or feta as a substitute)

- In serving bowls, layer the cooked rice first, top with sliced chicken, and generously scoop the corn mixture over the top.
- Garnish with optional toppings and serve warm.
Notes
This dish is highly customizable. For extra flavor, marinate the chicken for 30 minutes. It can also be made vegetarian by swapping chicken for black beans or grilled vegetables.
