Description

Delightful Strawberry Oatmeal Bars that combine the sweetness of strawberries with the wholesome texture of oats, perfect for breakfast, snacks, or dessert.


Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour (can substitute with regular flour)
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen strawberries, chopped
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a large bowl, combine rolled oats, almond flour, maple syrup, melted coconut oil, salt, and vanilla. Mix until fully combined.
  3. Press half of this mixture into the bottom of your prepared baking pan to form a solid base.
  4. In another bowl, combine chopped strawberries with cornstarch and lemon juice. Pour this mixture over the base layer.
  5. Crumble the remaining oat mixture over the strawberries, evenly distributing it.
  6. Bake in your preheated oven for 25-30 minutes, until golden brown on top.
  7. Remove from the oven, let cool for a bit, then slice into bars and enjoy!

Notes

Best served with Greek yogurt or vanilla ice cream. Store in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator.
