Delightful Strawberry Oatmeal Bars that combine the sweetness of strawberries with the wholesome texture of oats, perfect for breakfast, snacks, or dessert.

- 2 cups rolled oats
- 1 cup almond flour (can substitute with regular flour)
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen strawberries, chopped
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a large bowl, combine rolled oats, almond flour, maple syrup, melted coconut oil, salt, and vanilla. Mix until fully combined.
- Press half of this mixture into the bottom of your prepared baking pan to form a solid base.
- In another bowl, combine chopped strawberries with cornstarch and lemon juice. Pour this mixture over the base layer.
- Crumble the remaining oat mixture over the strawberries, evenly distributing it.
- Bake in your preheated oven for 25-30 minutes, until golden brown on top.
- Remove from the oven, let cool for a bit, then slice into bars and enjoy!
Notes
Best served with Greek yogurt or vanilla ice cream. Store in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator.
