Instructions

  1. Make the Cheesecake Filling: In a bowl, beat together the cream cheese, 15 g of sugar, and 1/2 tsp of vanilla until smooth. Scoop the mixture into small portions, place them on a tray, and freeze for about 1–2 hours until firm.
  2. Prepare the Strawberry Compote: Dice the strawberries and combine them in a pot with 15 g of sugar and 1 tsp of lemon juice. Cook this mixture over medium heat until it thickens and becomes jammy. Allow it to cool.
  3. Preheat the Oven: Set your oven to 175°C (350°F).
  4. Make the Dough: In a large mixing bowl, cream together the softened butter and 90 g of sugar until fluffy. Add the egg yolk and 1 tsp of vanilla extract; mix well. Gradually stir in the flour and baking powder until fully combined. Gently fold in the cooled strawberry compote.
  5. Shape the Cookies: Scoop a portion of the cookie dough, flatten it in your palm, and place a frozen cheesecake filling in the center. Wrap the dough around the filling, seal it well, and place the cookie on a baking tray.
  6. Bake: Put the tray in the oven and bake for 11–12 minutes, or until the edges are set.
  7. Cool and Enjoy: Allow the cookies to cool slightly on the tray. The cheesecake center will firm as they cool, creating a delightful treat ready for devouring!
