  • 1 cup cream cheese, softened
  • ⅔ cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • About 1 cup granulated sugar (for rolling)

Instructions

  1. Prepare the Cheesecake Filling: Beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Drop 1 to 2 teaspoon-sized dollops onto a parchment-lined tray and freeze for 30 to 60 minutes.
  2. Cream Butter and Sugars: In a separate bowl, beat the softened butter along with the brown and granulated sugars until light and fluffy, about 3 minutes.
  3. Add Wet Ingredients: Mix in the egg, vanilla extract, strawberry extract, and food coloring (if using) until smooth.
  4. Add Dry Ingredients: Gradually mix in the flour, baking soda, baking powder, and salt on low speed until thick and smooth.
  5. Stuff Cookies: Take about 2 tablespoons of dough, flatten it, and place a cheesecake dollop in the center. Seal and roll into a ball, then coat in granulated sugar.
  6. Bake: Preheat the oven to 350°F (175°C), place the cookie balls on a baking sheet and bake for 10-12 minutes until edges are set. Allow to cool completely.
